French Toast

French toast that is just the right amount of crispy and chewy and is not overly sweet.

Ingredients

  • 1 loaf day-old Challah Bread cut into 1/2 - 3/4-inch slices
  • 1 cup half-and-half
  • 3 large eggs
  • 2 tablespoons honey warmed in microwave for 20 seconds
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • 4 tablespoons butter

Instructions

  • Preheat oven to 375 degrees
  • Whisk together the half-and-half, eggs, honey, salt, and vanilla in a medium-sized mixing bowl. Pour mixture into a shallow bowl or pie pan and set aside.
  • Dip bread into mixture and allow to soak for 30 seconds on each side. Place on a cooling rack set on a baking sheet and allow to sit for 1 - 2 minutes.
  • Set a griddle or large frying pan over medium-low heat. Spray surface with cooking spray and then melt 1-2 tablespoons of butter. Place 2 - 4 slices on pan or griddle. Cook about 2-3 minutes per side, until golden brown. Remove from pan and place on rack in oven for 5 minutes (I use a perforated pizza pan for this step as the racks in my oven have wide slats). Repeat with all 8 slices.

Notes

To add some sweetness, serve with maple syrup or cinnamon sugar.
