That hot pink stuff in the jar? Mild. A poor, pale shadow of true horseradish. This stuff, if you get a fresh root, will clear your sinuses for weeks. This works best with a traditional food processor

Equipment

Ingredients

  • 1 Root Horseradish look for a root with the least knobs, and the fresher the better
  • 1 Jar Manaschewitz Borscht beets in
  • 2 tablespoons White Wine Vinegar
  • 1 tablespoon Sugar
  • 1 pinch Kosher Salt

Instructions

  • Peel the horseradish root as best you can. You may need to use a knife rather than a peeler.
  • Using the circular grating blade, grate the horseradish in the food processor. Pour the grated horseradish into a bowl.
  • Drain the borscht and reserve the liquid.
  • Equip the metal blade in the food processor. return the horseradish and the beets to the food processor and process until chunky. Add the vinegar, sugar, and salt and run the food processor again. Add borscht liquid slowly, only if the mixture is dry, until it is desired consistency.
  • Jar/can, refrigerate, and enjoy!
