Pasta Fagioli Soup
A hearty and delicious pasta fagioli, so good that we got the recipe from the chef
Ingredients
- 1 tablespoon Olive Oil
- ½ Onion chopped
- 16 ounce can Cannellini Beans
- ½ cup Tomato Sauce
- ½ cup Chicken Stock
- 1 cup Dtialini pasta
- 1 tablespoon Butter
- Salt to taste
- Pepper to taste
- Flat Leaf Parsley chopped
- Grated Parmigiano Cheese
Instructions
- Cook Ditilini pasta to al dente
- In a large saucepan, sauté onions in olive oil until translucent.
- Stir in cannellini beans (with liquid), tomato sauce, chicken stock, pasta, & butter.
- Simmer 15 minutes.
- Stir in chopped parsley.
- Serve with fresh Parmigiano Cheese grated on top of each bowl.
