Pasta Fagioli Soup

Ingredients

  • 1 tablespoon Olive Oil
  • ½ Onion chopped
  • 16 ounce can Cannellini Beans
  • ½ cup Tomato Sauce
  • ½ cup Chicken Stock
  • 1 cup Dtialini pasta
  • 1 tablespoon Butter
  • Salt to taste
  • Pepper to taste
  • Flat Leaf Parsley chopped
  • Grated Parmigiano Cheese

Instructions

  • Cook Ditilini pasta to al dente
  • In a large saucepan, sauté onions in olive oil until translucent.
  • Stir in cannellini beans (with liquid), tomato sauce, chicken stock, pasta, & butter.
  • Simmer 15 minutes.
  • Stir in chopped parsley.
  • Serve with fresh Parmigiano Cheese grated on top of each bowl.
