Zucchini Bread or Muffins
Ingredients
- 3 Eggs
- 1 cup Vegetable or Canola Oil
- 2 ½ cups Sugar
- 2 cups Zucchini, Grated about 1 ½ medium zucchinis
- 1 teaspoon Vanilla
- 3 cups Flour
- 1 teaspoon Cinnamon
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1 ½ teaspoons Baking Powder
- 1 cup nuts, chopped OPTIONAL
Instructions
- Preheat oven to 350°
- Grate Zucchini, set aside
- Mix Eggs, Oil, and Sugar
- Mix in grated Zucchini and Vanilla
- Add Flour, Cinnamon, Baking Soda, and Baking Powder and beat well
To make bread:
- Pour into loaf pans and bake for 55 minutes (I find that 55 minutes is woefully inefficient. YMMV)
To make muffins:
- Pour into greased muffin tins and bake for 25 minutes
