Zucchini Bread or Muffins

Ingredients

  • 3 Eggs
  • 1 cup Vegetable or Canola Oil
  • 2 ½ cups Sugar
  • 2 cups Zucchini, Grated about 1 ½ medium zucchinis
  • 1 teaspoon Vanilla
  • 3 cups Flour
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 ½ teaspoons Baking Powder
  • 1 cup nuts, chopped OPTIONAL

Instructions

  • Preheat oven to 350°
  • Grate Zucchini, set aside
  • Mix Eggs, Oil, and Sugar
  • Mix in grated Zucchini and Vanilla
  • Add Flour, Cinnamon, Baking Soda, and Baking Powder and beat well

To make bread:

  • Pour into loaf pans and bake for 55 minutes (I find that 55 minutes is woefully inefficient. YMMV)

To make muffins:

  • Pour into greased muffin tins and bake for 25 minutes
