Turkey or Sausage & Bean Chili
Highly versatile and simple to make with items on-hand, yet a delicious crowd pleaser!

Ingredients
- 1-2 tablespoons Olive Oil
- 3 cups Yellow Onion Chopped
- 1 ¼ lb Ground Turkey or Turkey Sausage
- 1 28-oz can Roasted Diced Tomatoes (drain 1/2 liquid)
- 1 15-oz can Pinto Beans rinsed & drained
- 1 15-oz can Black Beans rinsed & drained
- 1 cup Chicken Broth
- 2 tablespoons Chopped Garlic
- 1 tablespoon Dark Chili Powder
- 1 tablespoon Chipotle Chili Powder
- 1 teaspoon Dried Oregano 1 tablespoon if fresh
- ½ teaspoon Ground Cumin
- 1 teaspoon Mustard Powder
- 1 Package Baby Spinach (optional)
Instructions
- Heat olive oil in a large saucepan. Add the onions and saute until they are soft and almost clear.
- Add ground turkey (or sausage if uncooked - if cooked add with other ingredients) and cook over medium-high heat until cooked through and no longer pink (about 6 minutes).
- Add tomatoes, beans, broth, garlic, chili powder, oregano, cumin, and mustard powder (aIf using cooked sausage, add at this time).
- Bring to a boil, then reduce heat to low, cover, and simmer ~20 minutes
- Add baby spinach and cook until wilted.
- Serve in bowls
Notes
There are many adaptations that can be made to this recipe to satisfy taste. I add the chili after I remove the servings I will give to the kids and let it simmer another 5-10 minutes. You can forego the spinach. Add other vegetables. Add rice. Make it your own!
