Matzo Brei

 

Mom's Mazto Brei

A delicious, traditional Jewish breakfast food for Passover, but tasty any time of year! The literal translation is "Fried Matzo."

Ingredients

  • 8 Eggs separated
  • 8 Sheets of Matzo
  • 4-6 cups Hot Water
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons Manischewitz Concord Grape wine
  • 2 tablespoons Sugar optional
  • Cinnamon sugar optional

Instructions

  • Break matzo into small pieces and place in a large colander/strainer over a large bowl.
  • Pour hot water over the matzo and into the bowl.
  • Repeat 4-5 times reusing the same water (pour back into measuring cup from bowl, then over matzo again). Discard the water and put the wet matzo into the empty bowl.
  • Separate the eggs one at a time and add only the yolks to the matzo. Add the wine, sugar, salt & pepper and stir until well blended
  • In a separate bowl, beat the egg whites to form stiff peaks.
  • Fold egg whites into matzo mixture.
  • Melt some butter in a large frying pan. Pour the entire mixture into the pan. Let the bottom side turn golden brown then flip the whole thing over to brown the other side.
  • Flip onto a plate and allow to cool a bit before serving.
  • Sprinkle with cinnamon sugar or serve with maple syrup.
