Break matzo into small pieces and place in a large colander/strainer over a large bowl.
Pour hot water over the matzo and into the bowl.
Repeat 4-5 times reusing the same water (pour back into measuring cup from bowl, then over matzo again). Discard the water and put the wet matzo into the empty bowl.
Separate the eggs one at a time and add only the yolks to the matzo. Add the wine, sugar, salt & pepper and stir until well blended
In a separate bowl, beat the egg whites to form stiff peaks.
Fold egg whites into matzo mixture.
Melt some butter in a large frying pan. Pour the entire mixture into the pan. Let the bottom side turn golden brown then flip the whole thing over to brown the other side.
Flip onto a plate and allow to cool a bit before serving.
Sprinkle with cinnamon sugar or serve with maple syrup.
