Zucchini Bread or Muffins

Ingredients

Eggs

cup
Vegetable or Canola Oil
2 ½
cups
Sugar

cups
Zucchini, Grated
about 1 ½ medium zucchinis
1
teaspoon
Vanilla
3
cups
Flour
1
teaspoon
Cinnamon
1
teaspoon
Salt
1
teaspoon
Baking Soda
1 ½
teaspoons
Baking Powder
1
cup
nuts, chopped
OPTIONAL
Instructions
Preheat oven to 350°
Grate Zucchini, set aside
Mix Eggs, Oil, and Sugar
Mix in grated Zucchini and Vanilla
Add Flour, Cinnamon, Baking Soda, and Baking Powder and beat well
To make bread:
Pour into loaf pans and bake for 55 minutes (I find that 55 minutes is woefully inefficient. YMMV)
To make muffins:
Pour into greased muffin tins and bake for 25 minutes
