Banana Bread/Muffins

My mom got this recipe from our neighbor Josie. I is still the best banana bread I've ever had.

Ingredients

  • 1 ¼ cup Sugar
  • ½ cup Butter
  • 2 Eggs
  • 1 cup Banana Pulp approx. 2 overly ripe bananas
  • 1 ½ cup Flour
  • ½ teaspoons Salt
  • 1 teaspoons Vanilla
  • 1 teaspoons Baking Soda
  • 4 tablespoons Sour Cream

Instructions

  • Preheat oven to 350°
  • Cream Butter & Sugar
  • Add Eggs and beat well
  • Add Banana Pulp
  • Add Flour & Salt
  • Dissolve Baking Soda and Vanilla in Sour Cream
  • Add to mixture and beat well
  • Pour into greased loaf pan or muffin tin (if not using foils)
  • Bake for 20-25 minutes until a toothpick inserted into the center comes out clean

Notes

Banana bread too sweet? Try using one banana that is over ripe and one that is still mostly yellow
